We can't get enough of Jacoby's, especially after touring it and catching up with co-founder, Kris Swift. Here's is a little glimpse of the breathtaking Restaurant and Mercantile and a behind-the-scenes conversation with the creative force that makes Jacoby's one of our favorite dinner destinations.

Tell us about Jacoby's Restaurant and Mercantile, how did the integration of restaurant and mercantile come about?

The Restaurant & Mercantile all started with my partner, Adam Jacoby. The Jacoby Family has owned a Cafe and Feed Store in Melvin, Texas for quite some time. When Adam found this incredible location for Jacoby’s Austin, having the Mercantile as an extension of the experience was a natural and dynamic fit.

What inspires the Jacoby’s menu?

Inspiration comes in many forms but I’d say the top sources are The Family Owned Vertically Integrated Jacoby Brand Beef that comes from the family ranch, fresh seasonal vegetables sourced from our neighboring local farms & a family tradition of serving traditional southern faire with a modern twist. Our executive Chef Carlos is inspired by numerous things and brings a very unique perspective to our menu.

Are there any flavors or techniques you are excited about diving into?

We’ve been using our on site smoker quite a bit and are excited to use it in several different ways.

We love the mercantile mix of modern and vintage. Where are some of your favorite places to source your goods?

Adam and I are constantly curating the goods we have in the Mercantile, some of our favorite places to shop for vintage are the tiny towns scattered across Texas. It’s so charming supporting these small family run businesses.

How has the Austin vibe shaped Jacoby’s?

Jacoby’s is both quintessentially Melvin, Texas & Austin, Texas. Retail and food & beverage culture in Austin is dynamic and incredibly exciting at the moment, we couldn’t be more thrilled to be a part of it.

Just for kicks, let’s say you’ve been stranded on a deserted island for the past year. After being rescued, what would be your first Jacoby’s meal?

Chicken Fried Steak, Mac & Cheese, & a Muskoka Smash with a Coffee, & Jacoby’s Signature Strawberry Cake for Desert.

What is your favorite customer experience?

Our guests are incredible, they range the gamut from young to old and every night in the Restaurant & Mercantile is different. It’s what keeps us on our toes and constantly evolving.
